My Mushroom Logs
Wild mushrooms are very hard to come by here in Beirut, and when I do come across them they're eye-wateringly expensive. So while dry mushrooms will often do the trick, I desperately miss my fresh shiitakes, oysters, portobellos, chestnuts, not to mention girolles, morelles, and chantarelles. While browsing Food52 for Christmas ideas, I came across these logs by 2FunGuys. They are filled with mushroom spores and with any luck will sprout my very own crop of shiitakes and oyster mushrooms. I've now soaked the logs overnight and refrigerated them to mimick the outdoors, and now they'll sit in a dark, cool room where they'll hopefully sprout delicious mushrooms. I'll keep you posted.
